Using a yellow cake mix keeps it simple, quick, and foolproof — perfect for busy mornings, holiday brunches, or any time you need easy breakfast ideas, quick desserts, or a sweet snack. This easy recipe checks all the boxes: quick prep, minimal mess, and absolutely irresistible flavor.

Ingredients

1 box yellow cake mix (15.25 oz)

3 large eggs

1 cup sour cream

1/3 cup vegetable oil

1 cup brown sugar

2 teaspoons ground cinnamon

1/4 cup butter, melted

1 cup powdered sugar

23 tablespoons milk or cream

1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, mix the yellow cake mix, eggs, sour cream, and vegetable oil until smooth.

3. In a separate bowl, combine brown sugar, cinnamon, and melted butter to make the crumble.

4. Spread half the cake batter into the pan, sprinkle with half the crumble, then repeat with remaining batter and crumble.

5. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

6. While the cake bakes, whisk powdered sugar, milk, and vanilla extract until smooth to make the glaze.

7. Let the cake cool for 15 minutes, then drizzle with glaze. Serve warm or at room temperature.

Notes

Let the cake cool slightly before glazing so it doesn’t absorb too much moisture.

Add chopped pecans or walnuts to the crumble topping for a crunchier texture.

You can swap sour cream for Greek yogurt without compromising flavor or texture.
