Ingredients

4 boneless skinless chicken breasts

1 wheel (5.2 oz) Boursin Garlic & Fine Herbs cheese

1 cup sliced mushrooms

2 cloves garlic, minced

3/4 cup heavy cream

1/2 cup chicken broth

1 tablespoon butter

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Season both sides of the chicken breasts with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.

3. Reduce heat to medium and add butter to the skillet. Once melted, add mushrooms and cook until browned, about 5–7 minutes.

4. Stir in garlic and sauté for 30 seconds until fragrant.

5. Deglaze the pan with chicken broth, scraping up any browned bits. Simmer for 2–3 minutes.

6. Add Boursin cheese and stir until fully melted and incorporated into the sauce.

7. Pour in heavy cream and let the sauce gently simmer for 3–5 minutes until slightly thickened.

8. Return the chicken to the skillet and coat with sauce. Simmer for another 5–7 minutes until chicken is cooked through.

9. Garnish with fresh parsley and serve hot with your favorite side dish.


Notes

Pound thicker chicken breasts to an even thickness for faster, more even cooking.

If your sauce thickens too much, thin it with a splash of broth or cream.

This dish tastes even better the next day—leftovers are delicious reheated.
