- 1 lb sirloin or ribeye steak, thinly sliced across the grain
- 1 tbsp olive oil
- 2 tbsp butter, divided
- 1 medium yellow onion, diced
- 2 cups mushrooms, sliced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- ¾ cup sour cream, room temperature
- Salt and pepper to taste
- 8 oz wide egg noodles, cooked
- Fresh parsley for garnish (optional)
Instructions
- Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear beef slices in batches, about 1–2 minutes per side, until browned. Remove and set aside.
- In the same pan, reduce heat to medium. Add the remaining butter and diced onions. Sauté for 3–4 minutes until soft.
- Add mushrooms and cook 5–6 minutes until browned and their liquid has evaporated. Stir in garlic and cook for 1 minute more.
- Sprinkle flour over the mixture and stir well. Slowly add beef broth while stirring to create a smooth sauce.
