Ingredients
1 3/4 cups all-purpose flour

1/4 cup brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup milk or buttermilk
1 teaspoon vanilla extract
1 1/2 cups chopped apples (peeled and cored)
1/2 cup all-purpose flour
1/4 cup brown sugar

1/4 cup unsalted butter, cold and cubed
Instructions
1. Mix the crumb topping: Combine flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly. Refrigerate.
2. Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
3. Mix wet ingredients: In another bowl, whisk sugars, melted butter, eggs, milk, and vanilla.
4. Combine wet and dry: Pour wet into dry and stir gently. Don’t overmix.
5. Fold in chopped apples evenly into the batter.
6. Fill muffin liners 3/4 full with batter.
7. Top with chilled crumb mixture and press lightly.
8. Bake at 375°F (190°C) for 18–22 minutes until golden and a toothpick comes out clean.
9. Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
Use a mix of tart and sweet apples for deeper flavor.
Make sure your crumb topping is chilled before adding.
