Ingredients
500g boneless chicken breast or thighs (cut into thin strips)
1 tablespoon soy sauce
1 tablespoon ginger-garlic paste
1 egg (optional, for extra crispiness)
2 tablespoons cornflour
2 tablespoons all-purpose flour
Salt to taste
Black pepper to taste
Oil for deep frying
1 tablespoon sesame oil (or any neutral oil)
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
1–2 green chilies (slit or chopped)
1 small onion, thinly sliced
1/2 cup bell peppers (optional)
2 tablespoons tomato ketchup
1 tablespoon chili garlic sauce
1 tablespoon soy sauce
1 tablespoon vinegar
1 teaspoon sugar
2 tablespoons water
Salt to taste
Spring onions, chopped
Dried red chilies
Sesame seeds
Instructions
1. In a large bowl, combine the chicken with soy sauce, ginger-garlic paste, egg, cornflour, all-purpose flour, salt, and pepper. Mix well and marinate for 20–30 minutes.
2. Heat oil in a deep frying pan. Fry chicken strips in batches until golden and crispy. Remove and drain on paper towels.
3. In a separate wok or pan, heat sesame oil. Sauté chopped garlic, ginger, and green chilies until fragrant.
4. Add sliced onions and bell peppers, stir-fry until slightly soft but still crunchy.
5. Add tomato ketchup, chili garlic sauce, soy sauce, vinegar, sugar, and a splash of water. Stir well and simmer until slightly thickened.
6. Toss the fried chicken into the sauce and stir-fry for 2–3 minutes until well coated.
7. Garnish with spring onions, sesame seeds, and dried red chilies. Serve hot with rice or noodles.
