Ingredients

  • 3 cups cooked, shredded chicken (rotisserie works great)
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 can Rotel (diced tomatoes with green chilies), drained
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese (divided)
  • 4 cups Nacho Cheese Doritos, lightly crushed (plus extra for topping)
  • 23 green onions, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13″ casserole dish.
  2. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, drained Rotel, taco seasoning, and 1 cup of cheese.
  3. Spread a layer of crushed Doritos on the bottom of the casserole dish.
  4. Spoon half of the chicken mixture over the Doritos.
  5. Add another layer of crushed Doritos, then top with the remaining chicken mixture.
  6. Sprinkle the remaining 1 cup of cheese over the top.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake for another 10 minutes until cheese is bubbly and edges are golden.
  9. Let rest for 5 minutes before serving.
  10. Top with extra crushed Doritos and green onions if desired.
