Ingredients
- 2 large boneless, skinless chicken breasts (halved lengthwise)
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth (or dry white wine)
- 2 tablespoons Dijon mustard
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon fresh thyme (or parsley), for garnish
Instructions
- Season & Sear the Chicken: Season the chicken breasts with salt and pepper. Heat butter and olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- Sauté the Garlic: In the same skillet, reduce heat to medium and add the garlic. Sauté for 30 seconds until fragrant.
- Deglaze the Pan: Pour in chicken broth (or wine) and scrape up any browned bits. Let simmer for 1–2 minutes.
- Make the Dijon Sauce: Stir in Dijon mustard and heavy cream. Let it simmer for 2–3 minutes, then add Parmesan cheese and stir until melted.
- Simmer the Chicken: Return the chicken to the pan, spoon the sauce over it, and let it simmer for 5–7 minutes until fully cooked (165°F/75°C).
- Garnish & Serve: Sprinkle with fresh thyme or parsley and serve hot with your favorite sides.
