  • Yield: 4 servings

Description

A rich and flavorful one-pan dish featuring tender chicken breasts smothered in a creamy Dijon mustard sauce. This easy recipe is perfect for busy weeknights yet elegant enough for entertaining. Serve it with mashed potatoes, roasted veggies, or a fresh salad for a complete meal.

Ingredients

  • 2 large boneless, skinless chicken breasts (halved lengthwise)
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth (or dry white wine)
  • 2 tablespoons Dijon mustard
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme (or parsley), for garnish

Instructions

  1. Season & Sear the Chicken: Season the chicken breasts with salt and pepper. Heat butter and olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  2. Sauté the Garlic: In the same skillet, reduce heat to medium and add the garlic. Sauté for 30 seconds until fragrant.
  3. Deglaze the Pan: Pour in chicken broth (or wine) and scrape up any browned bits. Let simmer for 1–2 minutes.
  4. Make the Dijon Sauce: Stir in Dijon mustard and heavy cream. Let it simmer for 2–3 minutes, then add Parmesan cheese and stir until melted.
  5. Simmer the Chicken: Return the chicken to the pan, spoon the sauce over it, and let it simmer for 5–7 minutes until fully cooked (165°F/75°C).
  6. Garnish & Serve: Sprinkle with fresh thyme or parsley and serve hot with your favorite sides.
