2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon dried oregano

2 tablespoons tomato paste

1/4 cup water or chicken broth

1/2 cup guacamole

1/2 cup pico de gallo or diced tomatoes

1/3 cup crumbled feta cheese

1/3 cup Greek yogurt

1/4 cup chopped cilantro

Lime wedges, for serving


Instructions

1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized, flipping halfway through.

2. In a large skillet, heat olive oil over medium. Add chopped onion and sauté 3–4 minutes. Add garlic and cook another minute.
