Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 ½ cups enchilada sauce
  • 810 soft corn or flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 tbsp oil (for sautéing)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat oil over medium heat. Add ground beef and cook until browned, breaking it apart as you go.
  3. Drain any excess fat. Stir in diced onions and minced garlic; sauté until onions are translucent.
  4. Mix in taco seasoning and a splash of water; simmer for a couple of minutes.
  5. Warm tortillas individually in a skillet or microwave.
  6. Spread a thin layer of enchilada sauce on the bottom of a greased baking dish.
  7. Spoon beef mixture into each tortilla, sprinkle with a bit of cheese, roll tightly, and place seam-side down in the dish.
  8. Pour the remaining enchilada sauce evenly over the top and sprinkle with remaining cheese.
