Ingredients

2 pounds boneless skinless chicken thighs

1/4 cup soy sauce

1/4 cup hoisin sauce

3 tablespoons honey

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

4 cloves garlic minced

1 tablespoon fresh ginger grated

1 teaspoon Chinese five spice powder

1/4 teaspoon red food coloring optional

2 green onions sliced for garnish


Instructions

1. In a medium bowl whisk together soy sauce hoisin sauce honey brown sugar rice vinegar sesame oil garlic ginger Chinese five spice powder and optional red food coloring until smooth.

2. Place chicken thighs in a zip top bag or shallow dish pour marinade over and coat thoroughly. Refrigerate at least 4 hours or overnight.

3. Preheat oven to 400°F (200°C). Line baking sheet with foil and place greased wire rack on top.

4. Arrange chicken on rack reserving marinade. Roast 20 minutes.

5. Brush with reserved marinade and continue roasting 10 to 15 minutes until internal temperature reaches 165°F (74°C).

6. Broil 3 to 5 minutes to caramelize edges watching carefully.

7. Rest 5 to 10 minutes slice against the grain garnish with green onions and serve.


Notes

Marinate overnight for deeper flavor and improved tenderness.

Use a wire rack to allow even heat circulation and caramelization.

Watch carefully during broiling because the sugars in the glaze can burn quickly.
