Description

Looking for a comforting and easy dessert or breakfast idea? These Blueberry Butter Swim Biscuits bring together tender, buttery biscuits and sweet, syrupy blueberries in one irresistible bake. This easy recipe is perfect for anyone craving a quick breakfast, a rustic dessert, or a cozy food idea that hits all the right notes. With minimal prep and everyday ingredients, this dish is as easy as it is delicious — perfect for breakfast ideas, dinner ideas, or even a healthy snack when paired with yogurt or fruit.

Ingredients

1/2 cup unsalted butter

2 1/2 cups blueberries (fresh or frozen)

1/4 cup granulated sugar (for blueberries)

1 tablespoon cornstarch

1 teaspoon vanilla extract (optional)

2 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon granulated sugar

1 teaspoon salt

1 1/2 cups whole milk

Instructions

1. Preheat oven to 375°F (190°C) and place the butter in a 9×13 baking dish or oven-safe skillet. Let it melt in the oven as it preheats.

2. In a bowl, toss the blueberries with 1/4 cup sugar, cornstarch, and vanilla extract. Set aside.

3. In another bowl, mix flour, baking powder, sugar, and salt. Add milk and stir just until combined. The batter should be wet and thick.

4. Carefully remove the dish from the oven once the butter is fully melted. Spread the blueberry mixture evenly over the melted butter.

5. Dollop the biscuit batter on top of the blueberries in large spoonfuls. Do not spread — it will rise and spread on its own.

6. Bake for 40–45 minutes or until golden brown and bubbling.

7. Let cool for 10 minutes before serving to allow the juices to set.

8. Serve warm, optionally topped with whipped cream, vanilla ice cream, or yogurt.

Notes

Use cold milk to help keep the dough light and fluffy.

Don’t overmix the biscuit batter — stir until ingredients are just combined.

Place the baking dish on a tray in the oven to catch any potential blueberry overflow.
