Ingredients
4 cups broccoli florets
3 cups cauliflower florets
1/2 cup red onion, finely chopped
1 cup cheddar cheese, shredded
6 slices bacon, cooked and crumbled
1 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons granulated sugar
Salt and pepper to taste
1/4 cup sunflower seeds or sliced almonds (optional)
1/4 cup dried cranberries or raisins (optional)
Instructions
1. Wash and dry broccoli and cauliflower. Chop into bite-sized florets. Dice the red onion finely.
2. Cook bacon until crispy, then crumble and set aside.
3. In a small bowl, whisk together mayo, apple cider vinegar, and sugar until smooth. Add salt and pepper to taste.
4. In a large mixing bowl, combine broccoli, cauliflower, onion, cheese, and most of the bacon.
5. Pour dressing over the salad and gently fold to combine.
6. Chill in the fridge for at least 30 minutes before serving.
7. Top with remaining bacon and optional nuts or dried fruit before serving.
