Ingredients
- 3 medium ripe bananas, mashed (about 1 1/4 cups)
- 3 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 2 1/2 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon (optional)
- 1/4 tsp salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Line or grease a loaf pan.
- In a large bowl, mash bananas until mostly smooth.
- Add eggs, maple syrup, and vanilla; whisk until combined.
- In a separate bowl, mix almond flour, baking soda, baking powder, cinnamon, and salt.
- Fold dry ingredients into wet ingredients until just combined.
- Stir in nuts or any desired mix-ins.
- Pour batter into prepared pan and smooth the top.
- Bake for 45–55 minutes, until a toothpick comes out clean.
- Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
