Crunchy, fresh cucumbers dressed in a rich and spicy peanut sauce make for a perfect appetizer or side dish. With bold Asian-inspired flavors and just the right amount of heat, this no-cook recipe is quick to make, refreshing, and incredibly satisfying.


Ingredients

  • 2 cups cucumber, thinly sliced (Persian or English preferred)
  • 3 tablespoons smooth natural peanut butter
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil (or to taste)
  • 1 garlic clove, minced or pressed
  • 1 teaspoon maple syrup or honey (optional)
  • 1 tablespoon water (to loosen the sauce)
  • 1 tablespoon roasted peanuts, chopped (for garnish)
  • 1 teaspoon toasted sesame seeds
  • Fresh cilantro or green onions, chopped (optional garnish)

Instructions

  1. Wash and pat cucumbers dry. Slice into thin rounds.
  2. In a small bowl, whisk together peanut butter, soy sauce, vinegar, sesame oil, chili oil, garlic, and sweetener. Add water as needed to reach a smooth consistency.
  3. In a mixing bowl, toss cucumber slices with the peanut sauce until evenly coated.
  4. Refrigerate for 10–15 minutes if desired.
  5. Before serving, garnish with chopped peanuts, sesame seeds, and optional herbs.
  6. Serve chilled or at room temperature.
