Ingredients
- 2 cups cucumber, thinly sliced (Persian or English preferred)
- 3 tablespoons smooth natural peanut butter
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili oil (or to taste)
- 1 garlic clove, minced or pressed
- 1 teaspoon maple syrup or honey (optional)
- 1 tablespoon water (to loosen the sauce)
- 1 tablespoon roasted peanuts, chopped (for garnish)
- 1 teaspoon toasted sesame seeds
- Fresh cilantro or green onions, chopped (optional garnish)
Instructions
- Wash and pat cucumbers dry. Slice into thin rounds.
- In a small bowl, whisk together peanut butter, soy sauce, vinegar, sesame oil, chili oil, garlic, and sweetener. Add water as needed to reach a smooth consistency.
- In a mixing bowl, toss cucumber slices with the peanut sauce until evenly coated.
- Refrigerate for 10–15 minutes if desired.
- Before serving, garnish with chopped peanuts, sesame seeds, and optional herbs.
- Serve chilled or at room temperature.
