Description

Looking for a quick, refreshing bite that’s elegant enough for a party yet easy enough for everyday lunch? These Cucumber Tea Sandwiches are the perfect answer! With soft white bread, crisp English cucumbers, and a creamy herb spread, they’re a classic addition to any tea party, picnic, or brunch. Ideal for anyone in need of light breakfast ideas, healthy snacks, or easy lunch recipes, this no-cook dish delivers simplicity and charm in every bite.

Ingredients

8 slices white sandwich bread

1 English cucumber, thinly sliced

4 oz cream cheese, softened

1 tablespoon fresh dill, finely chopped

1/4 teaspoon salt

1/8 teaspoon black pepper

Instructions

1. Let cream cheese soften at room temperature.

2. In a bowl, mix cream cheese with chopped dill, salt, and pepper until smooth.

3. Use a mandoline or knife to thinly slice the English cucumber.

4. Lay out the bread slices and trim off the crusts.

5. Spread the cream cheese mixture on all slices of bread.

6. Layer cucumber slices on half of the bread slices, slightly overlapping.

7. Top with the remaining slices, cream cheese side down.

8. Press gently, then slice into triangles or rectangles.

9. Garnish with dill or a thin cucumber wedge if desired.

10. Serve immediately or store in the fridge until serving.

Notes

Make sure to pat cucumber slices dry to prevent soggy bread.

Use room temperature cream cheese for smooth, easy spreading.

Best served fresh, but you can prep components ahead of time.
