Description

A light and flavorful crustless quiche packed with fresh spinach, juicy cherry tomatoes, and creamy feta cheese. It’s a simple, gluten-free meal perfect for breakfast, brunch, or a quick dinner.


Ingredients

  • 5 large eggs
  • 1 cup whole milk
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 3/4 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish.
  2. In a skillet over medium heat, warm olive oil and sauté the spinach until wilted. Set aside to cool slightly.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Stir in the cooked spinach.
  5. Pour the egg mixture into the prepared pie dish.
  6. Distribute the cherry tomatoes evenly over the top, cut side up.
  7. Sprinkle feta cheese over the top.
  8. Bake for 35–40 minutes, or until the center is set and the top is slightly golden.
  9. Allow to cool for 10–15 minutes before slicing and serving.
