A hearty and comforting Crockpot Sausage Casserole slow-cooked to perfection with savory sausages, tender vegetables, and a rich tomato-based sauce. This one-pot meal is easy, flavorful, and ideal for cozy dinners or meal prep.
Ingredients
- 6 thick pork sausages (Cumberland or bratwurst preferred)
- 3 medium potatoes, peeled and chopped
- 3 carrots, peeled and chopped
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, sliced (any color)
- 2 tablespoons tomato paste
- 2 cups beef or chicken stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon oil (for browning sausages)
Instructions
- Heat oil in a skillet and brown the sausages on all sides. Set aside.
- Prepare vegetables by chopping potatoes, carrots, onion, garlic, and bell pepper.
- Layer onion and garlic at the bottom of the crockpot.
- Add potatoes, carrots, and bell pepper on top.
- Place browned sausages over the vegetables.
- In a bowl, mix tomato paste, stock, Worcestershire sauce, thyme, salt, and pepper.
- Pour the sauce over the contents in the crockpot.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Stir gently before serving. If sauce needs thickening, cook uncovered on high for 20–30 minutes.
