Description

A hearty and comforting Crockpot Sausage Casserole slow-cooked to perfection with savory sausages, tender vegetables, and a rich tomato-based sauce. This one-pot meal is easy, flavorful, and ideal for cozy dinners or meal prep.


Ingredients

  • 6 thick pork sausages (Cumberland or bratwurst preferred)
  • 3 medium potatoes, peeled and chopped
  • 3 carrots, peeled and chopped
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced (any color)
  • 2 tablespoons tomato paste
  • 2 cups beef or chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon oil (for browning sausages)

Instructions

  1. Heat oil in a skillet and brown the sausages on all sides. Set aside.
  2. Prepare vegetables by chopping potatoes, carrots, onion, garlic, and bell pepper.
  3. Layer onion and garlic at the bottom of the crockpot.
  4. Add potatoes, carrots, and bell pepper on top.
  5. Place browned sausages over the vegetables.
  6. In a bowl, mix tomato paste, stock, Worcestershire sauce, thyme, salt, and pepper.
  7. Pour the sauce over the contents in the crockpot.
  8. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  9. Stir gently before serving. If sauce needs thickening, cook uncovered on high for 20–30 minutes.
