Ingredients
1 pound ground beef
16 ounces Velveeta cheese, cubed
1 can (10 ounces) Rotel tomatoes with green chiles
1 tablespoon taco seasoning
4 ounces cream cheese (optional, for richness)
1/4 cup diced onions (optional)
2 tablespoons diced jalapeños or green chiles (optional)
Instructions
1. Brown the ground beef in a skillet over medium-high heat until no longer pink. Add diced onions if using and sauté until soft.
2. Drain excess fat from the pan to avoid greasy dip.
3. Stir in taco seasoning and a splash of water if needed. Simmer for 2–3 minutes until thickened.
4. Transfer the beef mixture to the crockpot.
5. Add cubed Velveeta, Rotel (with juice), and any optional ingredients like cream cheese or jalapeños.
6. Cook on LOW for 2 to 3 hours, stirring occasionally until fully melted and combined.
7. Once creamy and hot, stir well and serve directly from the crockpot on the WARM setting.
Notes
Cube your cheese to ensure it melts evenly and quickly in the crockpot.
Stir the dip occasionally during cooking to prevent scorching on the edges.
Use a crockpot liner or nonstick spray to make cleanup a breeze.
