Ingredients

1 lb ground beef

1 can (10 oz) Rotel tomatoes with green chilies, undrained

16 oz Velveeta cheese, cubed

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp smoked paprika (optional)

Salt, to taste

Black pepper, to taste

Optional toppings: chopped tomatoes, jalapeños, cilantro, green onions

Tortilla chips or bread, for serving


Instructions

1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease.

2. Transfer the cooked beef to the Crock Pot.

3. Add cubed Velveeta, Rotel tomatoes (with juices), garlic powder, onion powder, smoked paprika, salt, and pepper.

4. Set Crock Pot to low and cook for 1.5 to 2 hours, stirring every 30 minutes.

5. Once melted and well mixed, taste and adjust seasonings as needed.

6. Serve warm, garnished with optional toppings, and keep on the warm setting during serving.

7. Pair with tortilla chips, veggie sticks, or crusty bread.

8. Store leftovers in an airtight container in the fridge for up to 4 days.


Notes

For extra creaminess, stir in 4 oz of cream cheese toward the end of cooking.

To adjust heat, use mild or hot Rotel or add diced jalapeños.

Stir every 30 minutes to prevent cheese from burning or sticking to the edges.
