Ingredients

2 large boneless skinless chicken breasts

2 tablespoons Cajun seasoning

3 cloves garlic, minced

1 cup chicken broth

8 ounces cream cheese, softened

1 cup heavy cream

3/4 cup grated Parmesan cheese

12 ounces penne pasta

1 tablespoon butter

Salt and pepper, to taste

2 tablespoons chopped fresh parsley


Instructions

1. Season the chicken breasts with Cajun seasoning and place them in the crock pot.

2. Sprinkle the minced garlic over the chicken, then pour in the chicken broth.

3. Cover and cook on LOW for 4–6 hours, until the chicken is tender and cooked through.

4. Remove chicken, shred it with two forks, and return it to the crock pot.

5. Add cream cheese and heavy cream; stir until melted and combined. Let cook for another 20–30 minutes.

6. Meanwhile, cook penne pasta according to package instructions until al dente. Drain and set aside.

7. Add the cooked pasta to the crock pot and stir gently to coat with the sauce.

8. Stir in grated Parmesan cheese and butter until melted and well mixed.

9. Let it sit for 5–10 minutes to thicken slightly and meld flavors.

10. Garnish with chopped parsley and serve hot.


Notes

Use room temperature cream cheese for easier blending and a smoother sauce.

Always cook the pasta separately to prevent it from turning mushy in the crock pot.
