Ingredients

2 cups sweet corn kernels (fresh, canned, or frozen and thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

2 green onions, finely sliced

1/2 cup shredded cheddar cheese

1 large egg

1/4 cup milk

2 tablespoons sour cream or Greek yogurt

1 tablespoon chopped parsley or cilantro

23 tablespoons vegetable oil

Instructions

1. In a large bowl, whisk together flour, cornmeal, baking powder, salt, pepper, and smoked paprika.

2. Stir in corn kernels, green onions, cheese, and herbs.

3. In a separate bowl, whisk egg, milk, and sour cream until smooth.

4. Combine wet and dry ingredients; mix until just combined.

5. Heat 1 tbsp oil in a skillet over medium heat until shimmering.

6. Scoop 1/4 cup batter per fritter into pan; press to flatten.

7. Cook for 3–4 minutes per side until golden and crispy.

8. Transfer to a paper towel-lined plate. Repeat with remaining batter.

9. Serve warm with sour cream and fresh herbs.

Notes

Don’t overmix the batter; stir just until combined for fluffy fritters.

Use medium heat for crispy edges without burning.

To reheat, use a skillet or toaster oven to keep them crisp.
