Ingredients

1 pound sirloin steak

8 ounces penne pasta

1 cup heavy cream

3 cloves garlic, minced

1/2 cup freshly grated parmesan cheese

1 tablespoon butter

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.

2. Pat the steak dry and season both sides with salt and black pepper.

3. In a hot skillet over medium-high heat, add olive oil and sear the steak for 3–4 minutes per side. Remove and let rest for 5 minutes before slicing into bite-sized pieces.

4. In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 1 minute until fragrant.

5. Stir in heavy cream and bring to a gentle simmer. Add parmesan cheese and stir until the sauce is smooth and creamy.

6. Toss the cooked pasta into the sauce, adding reserved pasta water as needed to loosen the sauce.

7. Add the sliced steak and gently mix everything together.

8. Garnish with parsley and freshly cracked black pepper. Serve hot.


Notes

Let steak come to room temperature before searing to ensure even cooking.

Use freshly grated parmesan for the best melt and flavor.

If sauce thickens too much while resting, stir in a splash of milk or cream when reheating.
