Ingredients

4 boneless, skinless chicken breasts or thighs

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic, minced

1 yellow onion, finely chopped

1 cup chicken broth

3/4 cup heavy cream

1 teaspoon Dijon mustard

1/2 teaspoon paprika

Salt, to taste

Black pepper, to taste

2 tablespoons fresh parsley, chopped

3 cups cooked white rice


Instructions

1. Pat chicken dry and season with salt, pepper, and paprika.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden, about 4–5 minutes per side. Remove and set aside.

3. Lower heat to medium. Add butter, then sauté onions until translucent, about 3–4 minutes. Add garlic and cook for 1 minute.

4. Deglaze the pan with chicken broth, scraping up brown bits. Stir in Dijon mustard and heavy cream. Let it simmer for 5–6 minutes to thicken.

5. Return chicken to the pan and spoon sauce over the top. Cover and simmer on low heat for 8–10 minutes or until chicken is cooked through.

6. Meanwhile, cook the rice according to package instructions.
