- 12 oz pasta (rigatoni, penne, or fettuccine)
- 1 cup pumpkin purée (canned or homemade)
- 1 cup heavy cream
- ½ cup freshly grated parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp butter
- ½ cup vegetable or chicken broth
- ¼ tsp nutmeg
- Salt and black pepper, to taste
- 1 tbsp olive oil
- Fresh sage leaves for garnish (optional)
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- Sauté the Garlic: In a large skillet over medium heat, melt the butter with a drizzle of olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Make the Sauce: Stir in the pumpkin purée and broth, letting it cook for a minute. Lower the heat and pour in the heavy cream, stirring until smooth. Season with salt, black pepper, and nutmeg.
- Add the Cheese & Simmer: Mix in the grated parmesan cheese, stirring until melted. If the sauce is too thick, gradually add some reserved pasta water to loosen it. Let the sauce simmer for 2-3 minutes.
- Toss in the Pasta: Add the cooked pasta to the skillet, tossing until fully coated in the creamy sauce. Cook for another 1-2 minutes to let the flavors meld.
- Garnish & Serve: Remove from heat, garnish with fresh sage and extra parmesan, and serve immediately.
