Ingredients

2 boneless, skinless chicken breasts

4 garlic cloves minced

1 tablespoon olive oil

1 teaspoon smoked paprika

0.5 teaspoon red pepper flakes

Salt and black pepper to taste

1 teaspoon soy sauce

1 cup uncooked jasmine or basmati rice

2 cups low-sodium chicken broth

1 cup milk

1 cup freshly grated Parmesan cheese

2 cups fresh spinach chopped

1 tablespoon unsalted butter

0.5 teaspoon onion powder

Extra grated Parmesan for garnish

Fresh parsley or basil for garnish

Lemon zest or juice for garnish (optional)


Instructions

1. Toss sliced chicken in olive oil, paprika, red pepper flakes, minced garlic, soy sauce, salt, and pepper.

2. Heat a large non-stick skillet over medium-high heat. Sear chicken until golden and fully cooked, about 5–7 minutes. Remove and set aside.

3. In the same skillet, melt butter over medium heat. Add the rice and toast it for 1–2 minutes, stirring to coat evenly.

4. Pour in chicken broth and milk. Add onion powder, salt, and pepper. Stir and bring to a gentle boil.

5. Reduce heat to low, cover, and let simmer for 15–18 minutes until rice is tender and most liquid is absorbed. Stir occasionally.

6. Stir in spinach and Parmesan cheese. Mix over low heat until cheese melts and spinach wilts.
