1.5 pounds chicken breast, cubed

1.5 pounds baby potatoes, halved

8 ounces baby bella mushrooms, sliced

4 cloves garlic, minced

1.25 cups heavy cream

0.75 cup freshly grated Parmesan cheese

2 tablespoons butter

2 tablespoons olive oil

2 tablespoons hot honey

2 tablespoons chopped fresh parsley

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, salt, pepper, and half the minced garlic. Roast cut-side down on a baking sheet for 25–30 minutes until crispy.

2. Season chicken breast cubes with salt and pepper. In a large skillet over medium-high heat, melt butter and sear the chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.

3. In the same skillet, add more butter if needed. Sauté sliced mushrooms until browned and tender, about 5–7 minutes. Add the remaining garlic in the last minute.

4. Lower heat to medium and pour in the heavy cream. Stir in Parmesan and simmer until slightly thickened. Season with more salt and pepper to taste.

5. Return chicken to skillet and stir to coat with the creamy mushroom sauce. Let simmer 2–3 minutes to combine flavors.

6. Remove potatoes from the oven and drizzle with hot honey. Toss gently to coat, then sprinkle with chopped parsley.
