Ingredients

340g rotini pasta

450g ground beef

2 teaspoons Cajun seasoning

2 cloves garlic, minced

200g Velveeta cheese, cubed

120ml heavy cream

150g shredded mozzarella cheese

0.5 teaspoon red chili flakes (optional)

Salt and black pepper to taste

2 tablespoons chopped fresh parsley for garnish

60ml reserved pasta water (as needed)


Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions. Drain, reserving ½ cup of pasta water, and set aside.

2. In a large skillet over medium heat, brown the ground beef, breaking it up with a spatula, until fully cooked. Drain excess fat.

3. Add minced garlic and Cajun seasoning to the beef. Cook for 2–3 minutes to deepen the flavor.

4. Reduce heat to medium-low. Add Velveeta cubes and heavy cream. Stir until cheese melts and sauce is smooth.

5. Toss cooked rotini into the beef-cheese mixture. Mix well. Add reserved pasta water if needed to loosen the sauce.

6. Stir in shredded mozzarella just enough to create gooey cheese pulls.

7. Season with salt, pepper, and red chili flakes if desired.

8. Garnish with chopped parsley and serve hot.


Notes

To prevent the sauce from clumping, always melt Velveeta over medium-low heat and stir constantly.

Stir in mozzarella at the very end to keep it stretchy instead of rubbery.

If reheating, add a splash of cream or milk to restore the creamy consistency.
