Ingredients
2 cups cooked rice
2 cups shredded cooked chicken
1 can (15 oz) black beans, drained and rinsed
1 cup sweet corn (fresh, frozen, or canned)
1 cup salsa (mild or spicy based on preference)
4 oz cream cheese, softened
1 1/2 cups shredded cheddar or Mexican blend cheese, divided
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
Optional toppings: diced avocado, chopped tomatoes, sour cream, fresh cilantro
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large bowl, stir softened cream cheese with salsa until smooth. Mix in cumin, chili powder, garlic powder, onion powder, salt, and pepper.
3. Add cooked rice, shredded chicken, black beans, corn, and 1 cup of the shredded cheese. Stir until well combined.
4. Spread the mixture evenly into the prepared baking dish. Top with the remaining 1/2 cup of cheese.
5. Bake uncovered for 20–25 minutes, until bubbly and cheese is melted.
6. Let the casserole rest for 5 minutes after baking.
