Keywords: quick dinner, one pan meal, creamy gnocchi, comfort food, vegetarian dinner ideas.

Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

3/4 cup chicken broth or vegetable broth

1/2 cup freshly grated parmesan cheese

2 cups baby spinach

1/2 teaspoon crushed red pepper flakes

1 teaspoon Italian seasoning

Salt, to taste

Black pepper, to taste

Fresh basil, for garnish (optional)

Instructions

1. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped sun-dried tomatoes and sauté for 1-2 minutes until fragrant.

2. Pour in the heavy cream and broth. Stir to combine and bring to a gentle simmer.

3. Add the gnocchi directly into the sauce. Cook for 5-6 minutes, stirring occasionally, until gnocchi are tender and sauce starts to thicken.

4. Add Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine.

5. Stir in baby spinach and cook until wilted, about 1-2 minutes.

6. Add grated parmesan cheese and stir until melted and sauce is creamy.

7. Remove from heat. Serve immediately, garnished with more parmesan, red pepper flakes, and fresh basil if desired.

Notes

Use freshly grated parmesan for the best melt and flavor.

Add a splash of broth or cream when reheating leftovers to revive the sauce.

Don’t let the cream boil—keep it at a gentle simmer for the best texture.
