Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz rotini pasta (or other twisted pasta)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Pinch of nutmeg (optional)
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and olive oil.
  2. In a skillet over medium-high heat, sear chicken for 5–6 minutes on each side until golden and cooked through. Set aside and let rest before slicing.
  3. Cook rotini pasta in salted boiling water according to package directions. Reserve 1/2 cup of pasta water and drain.
  4. In a large pan, melt butter over medium heat. Add garlic and sauté for about 1 minute until fragrant.
  5. Pour in heavy cream, stir, and bring to a simmer.
  6. Lower heat and gradually whisk in Parmesan cheese until melted and smooth.
  7. Add a splash of reserved pasta water to loosen sauce if needed. Season with salt, pepper, and nutmeg.
  8. Toss cooked pasta into the sauce. Stir until well coated.
  9. Add sliced chicken over the pasta and sprinkle with parsley before serving.
