Ingredients

20 oz cheese tortellini (refrigerated)

2 cups heavy cream

1 cup chicken broth

4 oz cream cheese (cubed)

3 cloves garlic (minced)

1 teaspoon Italian seasoning

1/2 cup Parmesan cheese (freshly grated)

2 cups fresh spinach

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)


Instructions

1. Add heavy cream, chicken broth, cubed cream cheese, minced garlic, and Italian seasoning to the crockpot. Stir to combine.

2. Cover and cook on LOW for 2–3 hours until the cream cheese has fully melted and blended. Stir occasionally if available.

3. Add the tortellini and stir gently to coat. Cook on LOW for an additional 20–30 minutes until tender.

4. Stir in Parmesan cheese and spinach. Let the spinach wilt into the sauce.

5. Taste and adjust seasoning with salt, pepper, and red pepper flakes.

6. Serve hot, garnished with extra Parmesan or herbs if desired.


Notes

Freshly grated Parmesan melts better and creates a smoother sauce than pre-shredded cheese.

Do not add the tortellini too early—it can overcook and fall apart.

If reheating leftovers, add a splash of milk or cream to restore the creamy texture.
