Ingredients
2 boneless skinless chicken breasts
8 oz cream cheese
1 cup shredded cheddar cheese
1 can Rotel diced tomatoes with green chilies
2 tablespoons taco seasoning
1 bag tortilla chips
1 cup sour cream
1/2 cup chopped fresh cilantro
1/2 cup diced tomatoes
Instructions
1. Spray your slow cooker with nonstick spray or use a liner. Add chicken breasts to the bottom.
2. Add Rotel, taco seasoning, and cream cheese on top of the chicken.
3. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
4. Shred the chicken directly in the crockpot with two forks and stir everything until well combined.
5. Lay tortilla chips on a plate or sheet pan and spoon the creamy chicken mixture over them.
