Ingredients
1 cup cottage cheese
1/2 cup Greek yogurt
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 cup graham cracker crumbs
4 tablespoons butter, melted
1/4 cup strawberry jam or pureed berries (optional)
Caramel sauce (optional topping)
Powdered sugar (optional garnish)
Ice cream scoop (optional for serving)
Instructions
1. Mix graham cracker crumbs with melted butter until the texture is like wet sand. Press firmly into the base of a springform pan or serving dish. Chill while preparing the filling.
2. In a high-speed blender, combine cottage cheese, Greek yogurt, honey, and vanilla extract. Blend until completely smooth.
3. If using jam or berry puree, gently fold it into the blended mixture to create a swirl—don’t overmix.
4. Pour the filling over the crust and smooth the top. Tap gently to release air bubbles.
5. Chill in the fridge for at least 4 hours or overnight until fully set.
6. Serve chilled, topped with caramel sauce, powdered sugar, and an optional scoop of ice cream.
