Ingredients

  • 12 oz rigatoni pasta
  • 1 lb beef sirloin or ribeye, cubed
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rigatoni until al dente (about 10–11 minutes). Drain and reserve ½ cup of pasta water.
  2. In a large skillet over medium-high heat, heat olive oil. Season beef cubes with salt and pepper. Sear beef until browned on all sides, about 4–5 minutes. Remove from skillet and set aside.
  3. Reduce heat to medium. In the same skillet, melt butter and add garlic. Sauté until fragrant, about 1 minute.
  4. Stir in the heavy cream and bring to a gentle simmer. Cook for 2–3 minutes.
  5. Gradually add mozzarella and parmesan, stirring until melted and smooth.
  6. Return the cooked beef to the skillet. Add drained rigatoni and toss to coat. Add a splash of pasta water if needed to thin the sauce.
  7. Taste and adjust seasoning with additional salt or pepper as needed.
  8. Garnish with chopped fresh parsley and serve hot.
