2 large boneless skinless chicken breasts
1 ½ tablespoons Cajun seasoning
1 tablespoon olive oil
Salt and black pepper to taste
12 oz penne pasta
Salt for pasta water
2 tablespoons unsalted butter
5 garlic cloves finely minced
1 tablespoon all-purpose flour
1 ½ cups heavy cream
1 cup freshly grated mozzarella cheese
¼ cup grated Parmesan cheese
½ teaspoon Italian seasoning
Pinch of crushed red pepper flakes (optional)
¼ cup chopped parsley
Instructions
1. Bring a large pot of salted water to a boil. Add penne and cook until al dente. Reserve ½ cup of pasta water, then drain and set aside.
2. Pat chicken dry and season with Cajun seasoning, salt, and pepper.
3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until cooked through. Remove and rest for 5 minutes, then slice.
