Ingredients
- 1 round sourdough bread boule (8–10 inches wide)
- 8 oz (225g) brie cheese, cut into small pieces
- 1/2 cup cranberry sauce (whole berry or smooth)
- 2 tbsp unsalted butter, melted (optional for brushing)
- 1–2 tsp fresh rosemary, chopped
- 1 tsp fresh thyme leaves (optional)
- Pinch of sea salt (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a cast iron skillet.
- Place the bread boule on a cutting board and, using a serrated knife, cut a crosshatch pattern into the bread without slicing all the way through.
- Tuck brie pieces evenly into the cuts of the bread.
- Spoon cranberry sauce into the same cuts, distributing it as evenly as possible.
- Sprinkle chopped rosemary and thyme over the top, tucking a bit into the bread crevices.
- Brush the top of the loaf with melted butter for a golden finish (optional).
- Loosely cover with foil and bake for 15 minutes.
- Remove foil and bake for another 10–12 minutes, until cheese is melted and edges are crispy.
- Garnish with fresh rosemary sprigs and serve warm.
