Ingredients

1 sheet puff pastry, thawed

6 ounces Brie cheese, cut into small cubes

1/3 cup cranberry sauce or whole berry cranberry

1 egg, beaten (for egg wash)

1 tablespoon honey or maple syrup (optional)

1 teaspoon fresh thyme leaves (optional)

1 pinch ground black pepper or cinnamon (optional)

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Unfold the puff pastry and cut it into 2.5 to 3-inch squares. Place them on the baking sheet.

3. Score a smaller square inside each puff pastry piece and prick the center with a fork.

4. Place a cube of Brie in the center of each square and top with about 1 teaspoon of cranberry sauce.

5. Sprinkle with a little black pepper or cinnamon if desired.

6. Brush the edges of the pastry with beaten egg.

7. Bake for 14–18 minutes, until golden brown and puffed.

8. Remove from the oven and let cool for 3–5 minutes.

9. Garnish with fresh thyme and drizzle with honey or maple syrup before serving.

Notes

Keep puff pastry cold until ready to use to ensure proper puffing.

Don’t overload with toppings — a small amount of Brie and cranberry goes a long way.

Use parchment paper to avoid sticking and make clean-up easy.
