1 pound ground beef

1 small onion, chopped

2 tablespoons taco seasoning

1 cup tomato sauce

3/4 cup frozen corn

3/4 cup frozen peas

1 red bell pepper, diced

3/4 cup salsa

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream, for topping

1 avocado, diced, for topping

2 tablespoons chopped fresh cilantro


Instructions

1. Preheat oven to 375°F (190°C).

2. In a skillet, cook ground beef over medium-high heat until browned. Drain excess fat.

3. Add onion and garlic, and cook until soft and fragrant, about 4–5 minutes.

4. Stir in taco seasoning and tomato sauce. Simmer for 5 minutes.

5. Mix in corn, peas, and red bell pepper. Cook until vegetables are tender, about 4–5 minutes.

6. Transfer mixture to a baking dish. Spread salsa evenly over the top.

7. Sprinkle shredded cheddar cheese generously over the surface.
