1 lb boneless, skinless chicken breasts or thighs, cut into strips

1 tsp smoked paprika

2 tbsp butter

3 garlic cloves, minced

2 tbsp all-purpose flour

1 1/4 cups whole milk (warm)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and freshly cracked black pepper to taste

4 large flour tortillas (burrito-size)

Butter or oil for toasting

Optional: baby spinach, sautéed mushrooms, caramelized onions, crushed red pepper flakes, chopped fresh parsley


Instructions

1. Toss chicken strips with olive oil, garlic powder, paprika, onion powder, salt, and pepper.

2. Sear chicken in a skillet over medium-high heat for 4–5 minutes per side until golden and cooked through.

3. In a saucepan, melt butter, sauté garlic, then whisk in flour to form a roux.

4. Slowly add warm milk while whisking, and cook until the sauce thickens.

5. Stir in mozzarella and Parmesan until smooth; season with salt and pepper.

6. Warm tortillas to make them pliable.

7. Lay chicken in center of tortilla, spoon over garlic cheese sauce, and add any extras.
