Ingredients
10 oz kielbasa sausage, sliced into rounds
12 baby potatoes, parboiled
2 ears fresh corn, cut into rounds
1 zucchini, thickly sliced
6 tbsp unsalted butter, melted
3 cloves garlic, minced
1 tbsp lemon juice
1 tsp Dijon mustard
2 tbsp fresh parsley, chopped
1/2 tsp red pepper flakes
1/2 tsp smoked paprika
Salt and pepper, to taste
1 tbsp olive oil
Lemon wedges, for serving
Skewers, soaked if wooden
Instructions
1. Parboil the baby potatoes in salted water for 10 minutes until just fork-tender. Drain and let cool slightly.
2. In a bowl, mix melted butter, garlic, lemon juice, mustard, parsley, red pepper flakes, paprika, salt, and pepper to create the cowboy butter.
3. Slice kielbasa, corn, and zucchini into even chunks for grilling.
4. Assemble the skewers by alternating sausage, potato, corn, and zucchini.
5. Brush all sides of the skewers generously with cowboy butter. Let sit for 10–15 minutes.
6. Grill skewers over medium-high heat for 10–12 minutes, turning and brushing with butter until golden and slightly charred.
7. Alternatively, roast in a 425°F oven for 20–25 minutes or air fry at 375°F for 12–15 minutes.
8. Serve hot, with extra cowboy butter and fresh lemon wedges on the side.
Notes
Be sure to pre-cook potatoes slightly so they roast evenly.
Soak wooden skewers to prevent them from burning on the grill.
