Ingredients

  • 1 cup cottage cheese (blended smooth)
  • 2 large eggs
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup oat flour or almond flour
  • 1/4 cup chocolate or vanilla protein powder (optional)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a blender, mix cottage cheese, eggs, maple syrup, and vanilla until smooth.
  3. In a large bowl, whisk cocoa powder, flour, protein powder (if using), baking powder, and salt.
  4. Pour wet mixture into dry ingredients. Stir until just combined.
  5. Fold in chocolate chips.
  6. Spread batter evenly into the prepared pan. Top with extra chips if desired.
  7. Bake for 20–25 minutes, until a toothpick comes out with moist crumbs.
  8. Cool for 15–20 minutes before slicing and serving.
