Fluffy, creamy, and protein-packed — these Cottage Cheese Egg Bites are a make-ahead breakfast dream. Blended with cottage cheese and baked to perfection, they’re deliciously satisfying and easy to customize with your favorite add-ins.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (full-fat or low-fat)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Swiss)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: 2 tbsp chopped green onions, 1/4 cup diced bell peppers, spinach, cooked bacon bits, or herbs

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or silicone mold.
  2. In a blender or food processor, combine eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
  3. Stir in any optional add-ins like veggies, herbs, or cooked meats.
  4. Pour mixture into muffin cups, filling each about 3/4 full.
  5. Bake for 22–25 minutes, until the tops are lightly golden and centers are just set.
  6. Let cool 5–10 minutes before removing from molds. Serve warm or store for later.
