Ingredients
- 6 large eggs
- 1 cup cottage cheese (full-fat or low-fat)
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or Swiss)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: 2 tbsp chopped green onions, 1/4 cup diced bell peppers, spinach, cooked bacon bits, or herbs
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or silicone mold.
- In a blender or food processor, combine eggs, cottage cheese, shredded cheese, salt, and pepper. Blend until smooth.
- Stir in any optional add-ins like veggies, herbs, or cooked meats.
- Pour mixture into muffin cups, filling each about 3/4 full.
- Bake for 22–25 minutes, until the tops are lightly golden and centers are just set.
- Let cool 5–10 minutes before removing from molds. Serve warm or store for later.
