Description

Looking for a creamy, crunchy, and protein-packed lunch idea that’s both healthy and delicious? This Cottage Cheese Chicken Salad Sandwich is the perfect blend of flavor and nutrition — ready in under 20 minutes! With cottage cheese as the creamy base, this sandwich is a lighter, high-protein alternative to traditional chicken salad recipes. It’s a fantastic choice for quick breakfast, easy lunch prep, or even a light dinner. Packed with shredded chicken, celery, red onion, and cranberries — it’s full of texture, sweet-savory flavor, and refreshing crunch. A must-try for your next meal prep or picnic!

Ingredients

2 cups shredded cooked chicken

1 cup cottage cheese

2 stalks celery, finely chopped

1/4 cup red onion, finely diced

1/3 cup dried cranberries

1/4 teaspoon salt

1/8 teaspoon black pepper

4 sandwich rolls or buns

4 leaves romaine or green leaf lettuce

Instructions

1. Shred or chop your cooked chicken into bite-sized pieces and set aside.

2. In a large mixing bowl, add cottage cheese and season with salt and pepper. Mix until smooth or slightly blended if desired.

3. Add in chopped celery, red onion, and cranberries. Mix until everything is well-coated.

4. Fold in the shredded chicken, mixing gently until fully incorporated. Taste and adjust seasoning.

5. Slice the sandwich rolls and layer with a leaf of lettuce on the bottom half.

6. Spoon the chicken salad generously over the lettuce and top with the other half of the roll.

7. Serve immediately or refrigerate until ready to eat.

Notes

Blend the cottage cheese for a creamier texture if you don’t prefer curds.

Toast the sandwich rolls for extra crunch and to prevent sogginess.

Store salad and bread separately if meal prepping to keep everything fresh.
