Ingredients

1 cup long grain white rice

2 tablespoons butter

2 cups low-sodium chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1 tablespoon soy sauce

1/2 cup chopped bell peppers

1/3 cup corn kernels

2 tablespoons chopped green onions or parsley

1/2 teaspoon salt (or to taste)


Instructions

1. Rinse the rice under cold water until the water runs clear to remove excess starch.

2. In a large skillet, melt butter over medium heat and add garlic powder, onion powder, paprika, and black pepper. Cook for 1–2 minutes until fragrant.

3. Add the rinsed rice and stir to coat with the spices. Toast for 2–3 minutes until lightly golden.

4. Pour in chicken broth and soy sauce. Stir, bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes.

5. Once rice is tender and liquid is absorbed, stir in chopped bell peppers and corn. Cook uncovered for 3–4 more minutes.

6. Turn off the heat, fluff rice with a fork, and garnish with green onions or parsley. Adjust seasoning if needed and serve hot.


Notes
