For the Dumplings:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon butter, melted
  • ½ cup milk (or buttermilk)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Sauté the Vegetables – In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, cooking until softened (about 5 minutes). Stir in the garlic and cook for another 30 seconds.
  2. Add Broth and Chicken – Pour in the chicken broth, then add the shredded chicken, thyme, salt, and black pepper. Bring to a simmer and let it cook for 10 minutes.
  3. Prepare the Dumplings – In a bowl, mix the flour, baking powder, and salt. Stir in the melted butter and milk until a soft dough forms. Avoid overmixing.
  4. Drop the Dumplings – Using a spoon, drop small portions of dough into the simmering soup. Cover with a lid and let cook for 15 minutes without stirring.
