Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine (or chicken broth)
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • ½ cup reserved pasta water (as needed)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until just al dente. Reserve ½ cup pasta water, then drain.
  2. In a large skillet over medium-high heat, heat olive oil.
  3. Season shrimp with salt and pepper. Sear shrimp 1–2 minutes per side until pink and opaque. Remove from skillet.
  4. Lower heat to medium. Add butter to skillet. Once melted, sauté minced garlic and red pepper flakes for 30 seconds until fragrant.
  5. Deglaze pan with white wine and lemon juice, scraping up browned bits. Let simmer for 2–3 minutes to reduce slightly.
  6. Return shrimp to the skillet. Toss cooked pasta into the sauce, adding reserved pasta water as needed to loosen.
  7. Remove from heat. Sprinkle with chopped parsley.
  8. Serve immediately with extra lemon wedges if desired.
