Ingredients
2 boneless skinless chicken breasts
1 large head romaine lettuce, chopped
1 cup croutons
0.5 cup freshly grated Parmesan cheese
Olive oil for grilling
Salt and freshly ground black pepper
0.5 cup mayonnaise or Greek yogurt
2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons Worcestershire sauce
2 cloves garlic, minced
2 anchovy fillets, finely chopped (optional)
0.25 cup freshly grated Parmesan cheese
Salt and pepper to taste
1 to 2 tablespoons water, to thin if needed
2 cups cubed day-old bread
2 tablespoons olive oil
0.5 teaspoon garlic powder
Salt to taste
Instructions
1. Marinate the chicken with olive oil, salt, pepper, lemon juice, and minced garlic. Let it rest for 30 minutes. Grill or pan-sear on medium-high heat for 6–7 minutes per side until fully cooked. Let rest before slicing.
2. For croutons, toss cubed bread with olive oil, garlic powder, and salt. Bake at 375°F (190°C) for 10–12 minutes until golden and crisp.
3. In a bowl, whisk together mayonnaise, lemon juice, Dijon, Worcestershire, garlic, anchovies (if using), and Parmesan for the dressing. Thin with water if needed.
4. Wash and thoroughly dry romaine lettuce. Chop into bite-sized pieces.
5. Toss lettuce with Caesar dressing until coated. Top with grilled chicken slices, croutons, and extra Parmesan.
6. Serve immediately while the chicken is warm and the croutons are crisp.
Notes
Make sure to dry the lettuce completely to prevent a watery salad.
