Cinnamon Sugar French Toast Muffins combine everything you love about classic French toast and cinnamon donuts in an easy-to-make muffin form. Custard-soaked bread cubes are baked until golden and topped with buttery cinnamon sugar for a warm, cozy treat perfect for breakfast, brunch, or dessert.
Ingredients
- 4 cups day-old brioche or challah bread, cubed
- 3 large eggs
- 1 cup whole milk
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (for custard)
- 1/4 tsp salt
- 2 tbsp butter, melted (for topping)
- 1/4 cup granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin well.
- In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth.
- Add the cubed bread and stir gently to coat all pieces. Let sit for 10–15 minutes to soak.
- Spoon the soaked bread mixture evenly into the muffin tin, pressing gently.
- Bake for 25–30 minutes, until tops are golden and set.
- While still warm, brush muffin tops with melted butter.
- In a small bowl, mix 1/4 cup sugar and 1 tsp cinnamon, then sprinkle over muffins.
- Let cool slightly before serving.
