Ingredients

3 large sweet potatoes

4 tablespoons butter

1 cup heavy cream

1/3 cup brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 teaspoon vanilla extract

1 1/2 cups mini marshmallows

1/2 cup chopped pecans


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with butter.

2. Peel and slice sweet potatoes into 1/8 to 1/4-inch thick rounds.

3. In a saucepan, melt butter. Stir in heavy cream, brown sugar, cinnamon, vanilla, and salt. Warm the mixture until sugar dissolves.

4. Layer half the sweet potatoes in the baking dish. Pour half of the cream mixture over them. Repeat with remaining potatoes and sauce.

5. Cover with foil and bake for 35–40 minutes until sweet potatoes are tender.

6. Uncover, top with marshmallows and pecans, and bake for another 10–15 minutes until marshmallows are golden.

7. Let rest for 5–10 minutes before serving.


Notes

You can prepare the entire dish a day ahead and bake just before serving for easy entertaining.

For a dairy-free version, swap in plant-based butter and cream, and use vegan marshmallows.
