Ingredients

24 maraschino cherries, well-drained and dried

2 cups shredded sweetened coconut

1 cup powdered sugar

1/2 teaspoon almond extract

1 1/2 cups dark or semi-sweet chocolate chips

1 tablespoon coconut oil


Instructions

1. Drain the maraschino cherries and pat them completely dry with paper towels.

2. In a bowl, mix shredded coconut, powdered sugar, and almond extract until well combined.

3. Scoop about 1 tablespoon of the mixture, flatten it, and wrap it around each cherry to form a ball.

4. Place all wrapped truffles on a parchment-lined tray and refrigerate for 30 minutes.

5. Melt chocolate chips with coconut oil in the microwave or over a double boiler until smooth.

6. Dip each chilled truffle in melted chocolate using a fork, letting excess drip off.

7. Return dipped truffles to the tray, garnish with shredded coconut or cherry halves if desired.
